La Poire Tapée
Rivarennes, a small village near the royal Loire river was in the 19th century the capital of the "Poire (pear) Tappée", a very particular refined culinary specialty. Hand-made and traditional, the old fashioned Poire Tappée is the result of the long and careful dehydration in wood-fired ovens. The pears become dry, will be flattened with the help of a "platissoire". An old method of preserving fruits, the Poire Tappée was shipped all over the northern Europe.
